奧米茄三(Omega-3)脂肪酸屬多元非飽和脂肪酸，是人體細胞結構中最重要的成份之一，也是細胞膜運作正常必需物質，因此又稱必需脂肪酸。亞麻籽含極豐富奧米茄三(Omega-3)必需脂肪酸：一湯匙亞麻籽含有3800毫克的奧米茄三脂肪酸，相當于魚肝油的10倍，但沒有腥味、高膽固醇和飽和脂肪酸的弊處。

亞麻籽不僅含有豐富的油脂和蛋白質，而且富含α-亞麻酸，含量在52%左右。α-亞麻酸是人體必需脂肪酸，只能從食物中攝物。攝入足量的α-亞麻酸可改善細胞攜氧能力，軟化血管，降低血液黏度。亞麻籽還含有大量的木酚素，具有抗腫瘤生成的作用。

食用方法：
將亞麻籽炒幹炒香後磨碎，加在面包或松餅中，或加在酸奶或谷類食品的上面，也可拌在小菜裏吃，也可用于打豆漿。
